In France, it’s just called toast

French toast piled on a plate As much as I profoundly enjoy breakfast food – and I am talking right down to the depth of my being – I had never before attempted French Toast. Now that I’ve made it a few times, this strikes me as somewhat ridiculous. It also strikes me that Freyja is a wonderful inspiration. Her blossoming dietary horizons are pushing me to try new foods, new recipes, and are giving me such an appreciation for old favourites (fresh raspberries, sharp cheddar, heaven).

1/2 cup, soy milk (I use vanilla-flavoured for this)
2 eggs
To taste, cinnamon or vanilla, etc
6 slices, bread
Small amount, butter

Preheat skillet to medium heat, lightly oiled with butter.
Beat eggs, soy milk, and cinnamon or vanilla together in a bowl that is broad enough to fit bread. One by one, dip bread slices into egg mixture, ensuring that both sides are well-coated. Place in skillet and cook until golden brown. Serve and enjoy immediately.
